Everybody has their favorite comfort meal, well ours is usually meatloaf. The only problem with meatloaf is that it can start to be boring. So here’s another variation to add to your repertoire. Your family will enjoy it guaranteed!
Start with a thin layer of Olive oil and 2 cloves of minced garlic on the bottom of your casserole dish. We use a enamel coated cast iron dish. Place a layer or two of sliced potatoes (we used 4 potatoes) on the bottom of the casserole dish. Top with salt and pepper.
Add your uncooked meatloaf mixture on top of your potatoes. Below is the recipe for our meatloaf.
My meatloaf recipe:
- 1 lb fresh ground beef
- 1- 1 lb chub of bulk breakfast sausage. I like to use the “hot” in mine.
- 1/2 of one red onion chopped
- 1/2 of one green bell pepper chopped
- 1/4 cup Italian bread crumbs
- 1 large egg
- 1/2 to 1 tablespoon Worcestershire sauce
- salt and pepper to taste
Mix all ingredients by hand in a separate bowl then shape to fit your dish.
Place meatloaf on top of the potatoes and flatten out to cover them completely. Cover the dish and place in a preheated oven. Cook for 60 minutes.
After an hour remove the casserole and check the meatloaf to see if it is cooked through. If using a meat thermometer that is 160 degrees.
At this point we like to drizzle ketchup on our meatloaf then place it back in the oven to brown the top. You can obviously skip the ketchup if you prefer.
Remove from oven, serve, and enjoy!!!
